Recipe Excerpt:

Old-Fashioned Chicken Pot Pie

Serves: 6-8

Ingredients:

  • 3 cups chicken broth
  • 1 teaspoon dried thyme
  • 4 medium Yukon gold potatoes, cut into 1/2 inch cubes
  • 2 cups baby carrots
  • 4 cups cooked chicken, cut into bite-size pieces or shredded
  • 1 1/2 cups frozen petite peas, defrosted
  • 1 cup frozen white corn, defrosted
  • 2 tablespoons unsalted butter, at room temperature
  • 2 tablespoons all-purpose flour

Directions:

  1. Pour the broth in the insert of a 5-to-7 quart slow cooker. Add the thyme, potatoes, and carrots, and stir to combine. Cover and cook on high for 3 to 4 hours, until the potatoes are tender.
  2. Add the chicken, peas and corn and stir to combine. In a small bowl, stir the butter and flour and make a paste. Add the paste to the slow cooker and stir to combine. Cover and cook for an additional 45 minutes to 1 hour, until the sauce is thickened.
  3. Serve from the cooker set on warm.
